- Make a well in the middle then whisk the wet ingredients together with the dry ingredients until smooth. There may be a few lumps which is fine..
- Gently whisk in a couple of tablespoons of milk if the batter is slightly too thick to ladle or scoop into the pan..
- Set aside the batter then heat a non-stick frying pan over low-medium heat..
- After 5 minutes of heating the pan dry, grease with a little butter or fry lite spray..
- Pour about 1/4 cup of batter into the pan at a time. When the top starts to form bubbles flip the pancake. The pancake should be golden brown after flipping. Cook until second side is golden in colour again. Should take about 1-2 minutes each side depending on how hot the pan is and how thick the pancake is..
